Grown in the southernmost state of Chiapas, bordering Guatemala, often at 1,200–1,700 meters.
Flavor Notes: Sweet, mild, and well-balanced with bright acidity, medium body, and smooth chocolatey undertones. Often accented by nutty, caramel, and subtle fruity hints like apple or red berries.
Cup Experience: A fresh, daily drinkable coffee from medium to dark roasts. This is smallholder coffee from the southern Mexican states of Chiapas and Oaxaca, where mountainous terrain offers ideal altitudes and climates for coffee cultivation. Growing on small farms averaging just a few acres, each producer carefully manages cherry picking and sorting to remove damaged or under-ripe cherries. Coffee is processed locally using micro-mills, where it is depulped, fermented for 24 hours, and then washed. The parchment coffee is sun-dried on patios before being sent to a central dry mill, where it is hulled and sorted by density and color for export. Small-holder coffees like this are Terroir coffees—highlighting the land's flavor.
